A beach-bar Mai Tai: fruitier than the original 1940s Trader Vic’s recipe (which uses aged rum, lime, orange curaçao and orgeat), but perfect for a frozen machine. It totals exactly 13 ounces — the three-drink volume from the Bahamas and Fiji manuals.

It’s a strong batch (7 oz of spirits), so serve in modest glasses.

Frozen Mai Tai recipe

Ingredients (3 drinks)

  • 2 oz sweetened lime juice
  • 2 oz orange juice
  • 2 oz pineapple juice
  • 2 oz spiced rum
  • 2½ oz white rum
  • 2½ oz triple sec

Plus: a full ice reservoir. Garnish: Orange, pineapple, cherry. Glass: Tiki mug or rocks glass.

Instructions

Tips for the best texture

  • Add ½ oz orgeat (almond syrup) for a more authentic Mai Tai taste.
  • Float dark rum on top.
  • Use fresh lime + simple syrup instead of sweetened lime if you prefer.
  • Garnish with a mint sprig — classic for Mai Tais.
  • Never put anything but ice in the ice reservoir, and don’t fill the jar past its maximum line — both are warnings in every manual.
  • Too thin? Hold the toggle in Shave Only for a few seconds, then Blend Only to mix it in. Too thick? Add an ounce of liquid and Blend Only.

How much ice should I put in the machine?

Fill the ice reservoir with ice cubes — the machine shaves the amount it needs for the cycle (dial models size it to the 1, 2 or 3-drink setting). The manuals recommend ice that has been out of the freezer for 10–15 minutes.

Will this work in a regular blender?

Yes — add about 1½–2 cups of ice per 12 oz drink and blend until smooth. The texture will be coarser than shaved ice.
