The Piña Colada has been the official drink of Puerto Rico since 1978, and Rupert Holmes’ 1979 hit "Escape (The Piña Colada Song)" made it famous everywhere else. It’s also one of the drinks Margaritaville machines do best: the shaver makes fine ice that the coconut fat turns velvety.

This page uses the ratio printed in the Tahiti manual for one 24-ounce jar — 2 oz rum, 2⅔ oz cream of coconut, 2⅔ oz pineapple juice — which equals equal parts coconut and pineapple with a little less rum. The original site’s quick version with bottled colada mix is in the variations.

Ingredients (2 drinks)

Plus: a full ice reservoir. Garnish: Pineapple wedge and maraschino cherry. Glass: Hurricane or colada glass.

Instructions

  1. Shake the cream of coconut well (it separates).
  2. Fill the ice reservoir.
  3. Add rum, cream of coconut and pineapple juice to the jar.
  4. Use the Coladas program if your machine has one (Tahiti, Bali); otherwise run the standard cycle.
  5. Garnish with a pineapple wedge and cherry.

Machine notes for this drink

  • Cream of coconut separates in the bottle; shake or stir it until smooth before measuring, or the batch will be unevenly sweet.
  • This batch uses about 7.25 fl oz of liquid for 2 drinks. If your drink comes out watery, the manuals’ first fix is to follow the recipe volumes or manually shave more ice; if it’s too stiff, add liquid and Blend Only.

Why this recipe works

Cream of coconut (sweetened, like Coco Real or Coco López) is not the same as coconut cream or coconut milk: it’s sweet and syrupy, which is what makes a colada taste right. Equal parts with pineapple juice keeps it from being cloying.

Tropical rum drinks lean on pineapple, coconut, passion fruit and citrus. Cream of coconut is the secret to a smooth colada; it adds fat that keeps shaved ice silky. Most of these recipes include two or more juices, which makes them lower in alcohol per ounce than they taste — but the rum still adds up across a batch.

Tips for the best texture

  • Use cream of coconut, not coconut milk — the drink will be bland and icy otherwise.
  • Canned pineapple juice is fine; fresh is brighter.
  • A pinch of salt makes coconut taste more coconutty.
  • Float ½ oz dark rum on top for a richer finish.
  • Never put anything but ice in the ice reservoir, and don’t fill the jar past its maximum line — both are warnings in every manual.
  • Too thin? Hold the toggle in Shave Only for a few seconds, then Blend Only to mix it in. Too thick? Add an ounce of liquid and Blend Only.

Serving & make-ahead

Garnish with pineapple wedge and maraschino cherry and serve in a hurricane or colada glass. Tropical drinks shine with big garnishes — pineapple wedges, orange wheels, cherries on a pick and a paper umbrella. Hurricane glasses or tiki mugs hold the larger pours. For a crowd, a Tahiti lets you run a colada, a rum punch-style drink and a virgin version side by side.

Variations

  • Easy mix version (original site): Per drink: 1¼ oz light rum, 2 oz bottled piña colada mix, ½ oz pineapple juice.
  • Strawberry colada: Add ½ cup frozen strawberries and use the Daiquiris program.
  • Painkiller-style: Use dark rum and replace a third of the pineapple with orange juice; dust with nutmeg.

Frequently asked questions

Is cream of coconut the same as coconut cream?

No. Cream of coconut is sweetened and syrupy (Coco Real, Coco López). Coconut cream is unsweetened. For coladas you want cream of coconut.

Which rum is best?

Light (white) rum is classic. Coconut rum makes it sweeter; dark rum makes it richer.

Why is my colada icy instead of creamy?

Too little cream of coconut or too much liquid. Stick to the ratio and use tempered ice.

How much ice should I put in the machine?

Fill the ice reservoir with ice cubes — the machine shaves the amount it needs for the cycle (dial models size it to the 1, 2 or 3-drink setting). The manuals recommend ice that has been out of the freezer for 10–15 minutes.

Will this work in a regular blender?

Yes — add about 1½–2 cups of ice per 12 oz drink and blend until smooth. The texture will be coarser than shaved ice.
